Peach, Gruyere and pancetta salad

This salad is a surprisingly good combination for a summer lunch. It gets its edge from the mix of the perfectly ripe peaches, and Gruyere cheese. Pancetta adds flavor and texture to it.
Pour the balsamic vinegar into a small saucepan and bring to boil over a medium heat. Let the liquid reduce to a syrup consistency (approximately 10 minutes) and remove from the heat. Allow to cool.
Drizzle the reduced balsamic over the top of the salad.
Add salt& pepper! And enjoy!
