Seafood from METRO Cash & Carry
When it’s about seafood, your best bet is to find out where and when you can find it. This time I had the fresh tuna on my shopping list for a delicioius
Black pepper-crusted tuna steak with wasabi-soy dipping sauce
I have this recipe from Roland Birr/ Gourmet Training, who is giving Wine & Food Horeca workshops within METRO Cash & Carry International.
This cut of tuna is best enjoyed medium-rare, like any great steak.
Ingredients: 4 tbsp fresh coarsely ground black pepper, a pinch of oil (sunflower or grape), a pinch of salt.
Ingredients for the sauce: 100ml soy sauce and ½ teaspoon wasabi. Combine the 2 ingredients for sauce, whisking with a fork. Adjust on your own taste.
You just add some neutral oil (sunflower or grape) into a pan, heat up the pan to very high temperature and add the tuna steak to sear for 5 sec on each side (very short!), take it out of the pan and role it in ground black pepper until it looks “battered” (well covered with black pepper all around). Subsequently you cut the tuna steak into 1 cm thick stripes and serve it with the sauce.
The spicy pepper crust is perfect with this meaty fish. It can be served with Basmati rice. It is a healthy yet nutritious dish. It can be paired with a glass of Sauvignon Blanc or Riesling. We had it with a glass of Le Colombier Chateau Capion. Enjoy! 🙂
