Scallops (Saint- Jacques) with basil – lemon vinaigrette

12 Scallops (Saint- Jacques), 50g grated parmesan.

For the sauce you need: 1 lemon juice, 3 sprigs of basil (chopped), 50ml olive oil, salt and pepper.

Wash the sea scallops in cold water, put on paper towels and pat with paper towels to dry thoroughly, then sprinkle scallops with some salt. Add some olive oil in a large nonstick skillet, over medium heat. Add scallops and cook 2 to 3 minutes on each side or until they get a lovely gold color.

For the dressing, combine the other ingredients in a jar and then sprinkle over the scallops. Add some grated parmesan on top and serve!

You can pair it with a glass of Chablis, a creamy and rich, with lemon and grapefruit flavors — it would be divine!
